“Paper Patterns” in the Culinary World: Dashi

Atelier Muji Ginza
Finished
Paper patterns are more than just tools for making things. They provide the information and frameworks necessary to create, incorporating the wisdom and experience of our predecessors. The food world has its own “paper patterns,” ranging from recipes to combination ratios for spices and seasonings. This exhibition is the third part of a series introducing the “paper patterns” of furniture, clothing, and food as basic tools that allow us to explore the meaning of creating things ourselves. It looks at dashi stock as an essential element of cooking and a building block of our daily diet, hoping to change dashi’s reputation as difficult and inconvenient ingredient.
